Ricotta, Goat cheese & basil pizza
Ingredients
Serves 6
- 1 onion, finely chopped
- 2 bell peppers, roughly chopped
- 1 tsp olive oil
- 1tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper
- 2 x 400g/14oz cans chopped tomatoes
- 1 pre made pizza crust
- plain flour, for dusting
- 10 cherry tomatoes, halved or whole
- 6 oz tub ricotta
- 4 oz goat cheese
- a few basil leaves, to serve
- Balsamic reduction to drizzle
Method
- Heat oven to 400 F.
- Saute the onion and peppers in the oil in a large pan over med heat for a few mins until soft. Pour in the tomatoes,add oregano, dried basil, and thyme, season with salt and pepper, then simmer for 10 mins.
- Flour a large baking sheet and roll out the dough until 1/4 in thin (you can make the dough thicker or thinner for your own personal preference). Bake for 5 mins on a shelf at the top of the oven until firm.
- Remove from the oven, spread with the sauce, add the cherry tomatoes, add sliced goat cheese, then dollop over spoonfuls of the ricotta. Bake for 10 mins more until the base is golden and crisp. top with basil leaves and balsamic drizzle and serve!
